Callaloo is a popular and traditional Jamaican dish made from the tender leaves of the callaloo plant, a leafy green similar to spinach or amaranth. It is a staple in Jamaican cuisine and is enjoyed for its rich flavor, versatility, and nutritional value.
The greens are typically sautéed with onions, garlic, tomatoes, sweet peppers, thyme, and Scotch bonnet pepper, then seasoned and cooked until tender. Callaloo is often prepared with saltfish (salted cod), but it can also be made with bacon, smoked herring, fresh seafood, or simply as a vegetarian side dish.
