Happy August!

We desperately need rain, the farm team has been busy moving around irrigation pipes to ensure everything gets enough water along with harvesting and packing all the delicious produce. I (Katelyn) work inside, thankfully with an AC unit, I can’t even imagine working outside in this heat doing all the manual tasks that our farm team does. It really makes you appreciate all the local fresh food available in the markets, these farmers make it happen!

On Wednesday we had a Goodbye Gathering for Holly, she is headed back to school in September to start her journey in Acupuncture! Holly was our Sprout Production Lead, and has worked with us for 2 years. We now welcome Vanessa to take over, who started mid-July! We also added a new team member to the packing team, Mckenzie.

Here is our “famous” How to cook with Callaloo video.

Kingsley’s recipe for callaloo: (From many years ago)
Rinse and chop it fine or coarse depending on what you like. 

1 onion chopped
1 spring of thyme chopped
1 green scallion chopped
1 sweet pepper chopped

In a pot with oil or butter sautéed all the ingredients together, keep stirring it so it won’t stick. Cook  for about 15 minutes. 

You can eat it with anything you want – rice, dumpling, bread, Irish potatoes. In Jamaica he eats it every day. While in Canada he says he has a 50/50 chance of eating it every day.

I just asked some other Jamaican farmers how they like it!

Patrick loves to eat it for breakfast with bread or lunch with dumplings. He cooks it similarly to Kingsley but will add some tomatoes, carrot, zucchini, cucumber, and meat seasoning.

Chris enjoys it just steamed with tomato, onions and seasoned with spice.

This is what I plan to make for supper tonight, Cheesy Ground Beef and Zucchini Casserole!

Zucchini Bread – I have never been successful at baking with zucchini, but the recipes always sounds yummy!

Lots and lots of delicious cherries!!
