Sharing some recipes and information on some of the veggies this week!

Garlic scapes are the round green things you got in the share. They are the flowering part of the garlic and in order for the garlic bulb to get bigger we cut the flowering end and more energy is put into the bulb.

  • Store garlic scapes in a bag in the refrigerator for 1-2 weeks.
  • Garlic scapes can be chopped up and used just like bulb garlic in any recipe

Green Onions

At TapRoot Farms we grow lots of green onions, so they make a regular appearance in the shares. They can be eaten raw or added at the last minute to cooked dishes.  They have a much milder flavor than onions.

Storage Tips: Pat dry and store in a plastic bag in the refrigerator

Culinary Tips

  • The white and green parts of the stem are both edible.
  • Cut off the root tips and discard.
  • Chop into fine pieces and add to salads, dips, and salad dressings
  • Sprinkle onto finished stir-fries or soups
  • Add to omelets and quiches.

Basil should not be kept in the fridge (it will turn black if it gets chilled).  It will keep best in a cool place away from sunlight.
