We are in full planting swing with carrots, beets, more spinach and peas are all in the ground. Hoping our early corn will be planted Monday/Tuesday before the Rain on Wednesday. The Greenhouses are busting at the seams and we will be bringing some of those plants out to “harden” off before transplanting. The first planting will be Kale, Swiss Chard and Peas (sno and sugar snap) I am hoping you all enjoyed the Jerusalem Artichokes. My favorite way to eat those is to Roast them in Olive Oil.
