In case you haven’t checked the share list for this week, everyone is getting some gorgeous organic green beans! I figured that this would be the perfect time to share my very favourite bean recipe- a quick and easy go to in our house, all summer long. This recipe is great hot or cold and doubles easily for larger gatherings. I’ve used a mix of green beans, dragon’s tongue, and purple beans, but this dish is great with any colour that you have on hand.
Ingredients
A couple big handfuls of fresh beans
4 cloves garlic, thinly sliced
1 small onion, finely diced
1 red chili, diced **optional
1 tsp grated ginger
1/4 cup hoisin sauce
1 tbsp soya sauce
2 tbsp sesame oil
splash of rice wine vinegar
Sesame seeds to garnish
Directions
Heat the oil in a large skillet on medium. Add garlic & onions and saute until translucent, but not brown. Add all remaining ingredients except beans & garnish, and mix well until bubbling gently. Add beans and toss to coat evenly in the sauce. Saute on medium heat until beans are as tender as you like them (I like to leave mine with quite a bit of crunch- about 4 minutes cooking time.) Place beans in a large serving dish, pour remaining sauce over top, and sprinkle with sesame seeds.
