I’m giggling with excitement to share this with you all. Simple, delicious, and in my opinion, not made nearly often enough.
It’s Sweet & Sour Sauce that is better than any take-out, and isn’t that terrifying shade of glow-in-the-dark red. Now, before we get to the recipe details, let me just say that I made the meal in the photo a couple of nights ago. We had baked Taproot chicken thighs from our CSA box and a simple fried rice with chopped kale, carrots & onions, all slathered in sweet & sour goodness. Besides being simple enough to whip up for a busy weekday meal, this sauce is 100% vegan, so you can use it to top anything your heart desires.
Seriously, it’s so easy & inexpensive to make that you’ll find yourself wondering how you were ever able to stomach the sickly sweet & sticky, bright red version.
Sweet & Sour Sauce
1 can pineapple tidbits
1.5 tbsp cornstarch
1/4 cup ketchup
1/4 cup brown sugar
1/4 cup cider vinegar
2 tbsp soya sauce
Directions
Drain pineapple & reserve juice. In a sauce pan, add all ingredients except pineapple, pineapple juice & cornstarch and bring to a gentle boil on med heat. Dissolve cornstarch in pineapple juice and add to pot while constantly stirring. Add pineapple chunks and continue stirring until sauce thickens (about a minute)
Now, here comes the difficult part. Pour it over something delicious and happily spoon it into your face.
I’m not kidding. That’s all there is to it.
