Thanks to everyone who has registered for the next season of CSA.  Meat and egg shares have sold out already!  (If you had a meat share this year and missed registering for the new season, please email me- teri@taprootfarms.ca)  We are excited for how many of you are continuing to be members next year, and the year is off to a great start so far!


Grand Pre Beef By Justine

This week we have partnered with Susan teBogt from Grand Pre and purchased some ground beef from her. If you have traveled through Grand Pre this summer you would have noticed these beautiful cattle in a pasture close to the road.

Susan's beef is raised strictly on grass which means pasture from May to November and then in the barn on a pack which is made of deep bedded hay in the winter where they eat hay or grass silage. She also don't use any hormones or antibiotics because the animals are healthier since they aren't raise in confinement.

Compared with feedlot beef, grass fed beef has less total fat, saturated fat, cholesterol, and calories. It also has more vitamin E, beta-carotene, vitamin C,  omega-3 fatty acids and conjugated linoleic acid or CLA's.


Tapping into fresh produce - CSA on CTV Morning Live!

Monday morning I (Teri) headed into Halifax to talk about CSA and show some of the gorgeous fruits and veggies that are in season right now (i.e. last week's shares!).  Thanks to the wonderful folks at CTV, and all you members who do your part each and every day by choosing local.  Your contribution to our farm is HUGE!!  :P

Recipes

As I mentioned last week, one of my New Year's resolutions around food was to delve into the realm of fermentation, so after this weekend I have all sorts of science experiments in the kitchen.  The 1st attempt at kimchi is bottled and now we wait (at least 5 days), to see how it tastes!  It was a great use for my napa cabbages!

Notes on Shares

Jon came up to the office this morning to make sure I told you: It's not an oversight that you are getting Napa two weeks in a row... This crop is near the end of it's storage life, so we are getting it out to you while it's still in great shape!  Feast on this and enjoy it, you won't be getting any more until next summer/fall.This cabbage is sweet and tender, and great for making kraut or kimchi, stir-fries, salads, etc etc etc!  All cabbage tastes great sauteed in sweet apple cider if you have some of that around.  It will also keep for a while in your fridge so long as it is stored in a plastic bag, or wrapped in a damp towel.

PEA SHOOTS AND ALFALFA SPROUTS!  (I am typing in capitals because it accurately reflects our excitement about these crops!)

Winter is officially here and now that we're all back from a break, pea shoots and alfalfa sprout production is underway!

So, if you're new to the farm this year, this is our winter treat... Fresh sprouts and shoots.  The alfalfa sprouts should be used first, within 4 days of when you receive them.  The pea shoots last a bit longer (about 10 days).  Both need to be stored in the fridge.  In the past, we have alternated the weeks that you receive them, meaning that this week Mon, Tues members get pea shoots and next week Wed, Thurs, Sat members will get them.  Please check the shares posting carefully to see what you are intended to receive on any given week!
