TapRoot Farms CSA Newsletter - Holiday Edition

Hello from a sunny snowy farm!

The farm is beautiful with it's blanket of snow, from the pig frolicking around with white on their noses, to the kale with it's little snowy caps on.

It was a busy few days here on the farm getting ready for the double share week. Monday was a snow day for the kids, so we had them and some of their friends over helping us make up the boxes, there was eleven of us all together so it went pretty smoothly. Tim had also brought in some Christmas chocolate so everyone was pretty happy.


Double Share Week

To the right is a photo of Adrien at Noggins making the gift packs of apples.  We're excited to have these as part of the fruit shares this week!

So, it's double share week this week.  Not TWO shares, double the amount of items in a larger box!  We will be using larger boxes for all of the shares, so please be careful at the pickup and ensure that you are taking the right box if you are at a self-serve location.

Enjoy the heaps of gorgeous produce!  Next shares delivery is in the new year, Jan 6 - 11!

A note about add on vegetable shares. If you add on a vegetable app or entree we will be making up a box that will look like the usual boxes (not a double share). So they will be to the side with the add ons at your pick up location.


Winter Solstice Celebration at TapRoot Farm

Saturday December 21, 2:00 - 6:00 PM.

Come by this coming Saturday for a winter farm walk, some hot chili and mulled apple cider.  Lots to see and do for the whole family, a great way to get the family outside just before the holidays.  We'd love to see you!

On the farm today:

Aliah is here this week helping out with a few special projects. Right now she is washing, blanching, cooling, and packing up spinach for us to sell as add ons. After that we'll be packing up dried thyme, nettle, mint, sage, and hot peppers that we dried this summer in craft paper bags also to be sold as add ons. So we can all look forward to that!

Betty and Evelyn are hard at work packing up brussels sprouts into 1 and 2 pound bags for the shares, after washing and boxing up the eggs for the rest of the week.

 

Aimee is downstairs putting together meat shares for Wednesday. The ducks going in this week are some of the biggest I've seen! Here is a link with some tips about roasting whole ducks : http://www.mapleleaffarms.com/48?tab=wholeduck.

Another way I've eaten duck, was in a rice paper wrap. First you roast a whole duck then take all the meat off. Then you have cut carrots, sprouts, onion, or any other fresh uncooked vegetable, and a peanut sauce. In each rice paper wrap you assemble duck, vegetables, and sauce. Very good and a niceway to enjoy your duck. way to enjoy your duck.

Cranberry Sauce Recipe

This week in your veggie share you are getting fresh cranberries from Indian Garden Farms (Glen Hebb) on the South Shore of Nova Scotia.  Here's a recipe for homemade cranberry sauce which uses the amount of cranberries in your share (double the recipe if you have the entree share with twice as many cranberries):

Ingredients

1 Wash and pick over cranberries. In a saucepan bring to a boil water and sugar, stirring to dissolve sugar. Add cranberries, return to a boil. Reduce heat, simmer for 10 minutes or until cranberries burst.

2 At this point you can add all number of optional ingredients. We typically mix in a half a cup of roughly chopped pecans with or without a few strips of orange zest. You can add a cup of raisins or currants. You can add up to a pint of fresh or frozen blueberries for added sweetness. Spices such as cinnamon, nutmeg or allspice can be added too.

3 Remove from heat. Cool completely at room temperature and then chill in refrigerator. Cranberry sauce will thicken as it cools.
