Beat the heat with this Rhubarb Iced Tea.

Ingredients:

Rhubarb

Water 

Sugar

Fresh mint

Beet Greens and Polenta

1 pound beet greens

1 1/4 inch slice of pancetta, diced into small cubes
1/4 cup chopped shallots
1/4 cup chopped sun-dried tomatoes
1 large garlic clove, minced

3/4 cup of water
1/2 tablespoon granulated sugar
1/4 teaspoon crushed red pepper flakes
2 tablespoons of cider vinegar, or to taste

They call this recipe a root-to-leaf recipe. A new term that I haven't hear before, love it!
