You are receiving a specialty pumpkin in your shares this week called Kakai.
They have hull-less seeds (no hard outer shell) making them easy and perfect for roasting.
To roast your pumpkin seeds simply cut open the top of your pumpkin, scoop out the seeds into a colander and rinse under water to separate the seeds from the fleshy bits. Then dry on a tea towel and you are ready to roast.
Great roasted on their own or just with salt and pepper, or you could try this sweet and salty version from garden therapy.
