I sat down with Warren and Elizabeth a few weeks ago to talk about their business of slow dough and their desire to bake more of it. I have been thinking in the back of my head for awhile now that maybe some of you would like to be connected to some really lovely, artisnal, slow, conscientiously prepared bread.

Warren and Elizabeth are doing something very special. We decided to try an 8 week offering of their amazing bread to our CSA members. There are two main reasons for this - one, we really want to share and assist small businesses however we can and two, I love their bread and I love their philosophy. Read on........
Slow Dough Pastries is an artisan bakery located in Wolfville Nova Scotia. Our goal is simple. To
provide wholesome and delicious pastries and breads made with fresh local ingredients. We are
committed to producing quality food without compromises. Our fine line of pastries are all butter
and contain no preservatives, lard, shortenings or substitute oils. Our traditional slow rise breads are
made without sugars or enrichments.
Elizabeth Charlton is the culinary face behind Slow Dough and a graduate of the George Brown
Pastry Arts program. She learned her trade in a fast paced boutique bakery serving the competitive
Toronto restaurant industry. She and her family came to the Valley in 2006, when she was hired as
the Pastry Chef for Windsors Coco Pesto Bistro and then at Wolfville's Tempest Bistro. 3 years ago,
Elizabeth and her husband, Warren Young, built a new home bakery and developed a line of
desserts and breads for the Wolfville Farmers Market. Slow Doughs all-butter pastries, wheat-free
desserts and unique breads have earned a reputation for both quality and flavour.
Slow Dough is available at this time on Tuesday or Saturday for TapRoot CSA members.
The pricing is as follows - $48 for the bread (that amount goes to Warren and Elizabeth. Their Italian Peasant is $5 and the Pan Co Sanit is $7), $14.40 (goes to us processing fees, market, and transport/delivery of product)
The start date is October 15 and it will run for 8 weeks.
